Herbed Lobster Roll

Seafood alternatives: bay shrimp, crabmeat

This is a multi-purpose sandwich idea that is just as delicious–and simple–with shrimp or crabmeat. For varied flavor, replace some of the parsley with other fresh herbs such as tarragon, chervil, basil or chives.

Pick over the lobster meat to remove any membrane or shell and set aside in a medium bowl. In a work bowl of a food processor, combine the cream cheese, mayonnaise, parsley, Worcestershire sauce, lemon juice, salt and pepper. Puree the mixture and taste for seasoning.

Add the cream cheese mixture to the lobster and stir to combine. Split the rolls lengthwise, leaving one long side attached, and spoon in the lobster filling. Wrap securely in plastic wrap, followed by foil.
