Creole Sauce

Cooking Instructions:

In medium skillet, sauté onion, celery, and garlic in oil until soft, about 3 minutes. Add flour, and sauté one-minute longer. Add tomatoes and liquid, thyme and cayenne. Cook 5 minutes, or until slightly thickened. Remove from heat and stir in lemon juice and pepper sauce. Cook to room temperature.

Makes about 2 cups.
