Crystallized ginger is ginger that has been cooked in a sugar syrup and dried; its slightly sweet, peppery flavor is a delicious complement to the fruits in this salsa. If you cannot find crystallized ginger, just use more fresh ginger.
In a medium bowl, stir together the wine, cranberries, vinegar and fresh and crystallized ginger. Let sit for 15 minutes, then add the papaya, pear and strawberries. Toss to mix well and serve.
