Seafood alternatives: red snapper, rockfish, halibut
This simple marinade enlivens fish with an enticing citrus flavor. It can be prepared at the last minute or left to marinate up to three days. If pressed for time, substitute your favorite bottled herbed Italian dressing for the marinade.
In a large shallow plastic container or sturdy resealable plastic bag, combine the oil, lemon juice, garlic, oregano, salt and pepper. Add the fish and seal carefully. Gently turn the container to coat the fish evenly. Marinate at room temperature for 30 minutes or refrigerate for up to 3 days.
Preheat a hot fire in a grill with a lightly oiled rack set 4 to 6 inches from the heat. Take the fish from the container, let excess marinade drip off and set the fish on the grill rack. Cook, basting occasionally with the marinade, until the fish is just firm to the touch and opaque throughout, 8 to 10 minutes; turn the fish once. Serve right away.To save on dishes, use resealable plastic bags for marinating meats and fish and tossing salads. When adding liquid to a bag, place the bag in a bowl to prevent the ingredients from spilling. Plastic bags are also ideal for keeping crackers and napkins dry since, as you use the contents, you gain space.
