Seafood Alternatives: Arctic char, trout, skewered shrimp.
This is a really quick mock-up of smoked salmon. The sweet glaze can be used as a marinade, as suggested here, or simply brushed on the salmon fillets just before grilling. For a real treat, grill this over apple or alderwood chips.
In a shallow, non-reactive dish, mix together the maple syrup, orange juice, grated orange and cayenne. Place the fish flesh side down in the mixture and let marinate for up to 6 hours. (Refrigerate if marinating longer than 30 minutes.) Preheat an outdoor grill to medium-high heat and lightly oil the grill. Remove the fish from the marinade and let the excess moisture drip off. Season to taste with salt and pepper. Grill the fish until the salmon is just opaque through, 4-5 minutes on each side.
