Salmon Steaks with Sweet Onions and Apples

Familiar to many scouts and campers, whole dinners wrapped in foil and cooked in the coals are a carefree summer meal. Any combination of seafood and vegetables can be used, but try to pick items that will cook evenly. This recipe use slices of tart apples, sweet onions and salmon steaks or Simply Seafood® Boneless Wild Keta Salmon portions or fillets that are cooked together with a bit of butter and lemon.

Cut 4 large pieces of foil about 14 inches long. Rub the center of each square with a little of the butter. Evenly distribute the onion and apple slices on the pieces of foil. Top with the salmon steaks, lemon slices, the remaining butter and season with salt and pepper.

Wrap each packet securely, tightly sealing the seams. Nestle the packets in low coals and cook for about 20 minutes; to check, carefully remove one packet from the coals and open to see if the salmon is cooked through. Or, you can cook the salmon packets on a heated barbeque grill until the packet juices are sizzling and the fish is opaque through when checked, 12 to 15 minutes.
