A classic composed salad with a pinwheel of bright flavors: hard-boiled eggs, tomato wedges, avocado, shrimp and Surimi crab and the best low-cal Louis dressing you’ve ever had…if we may be so immodest.
Garnishes: Tomato wedges, avocado slices, hard-boiled eggs
In a bowl, combine all ingredients except the seafood, lettuce and garnish. Blend well.
Place greens in a shallow, wide-mouthed salad bowl. Arrange seafood and garnishes in strips on top of lettuce. Drizzle dressing over salad and serve the remaining dressing on the side.
