Seafood alternatives: Squid, Rock Shrimp
Heat the olive oil in a medium skillet over medium-high heat. When hot, add the scallops and or calamari and cook, stirring for 30 seconds. Reduce the heat to medium, add the white wine, capers and parsley and cook, stirring, until the scallops are just opaque but still tender, about 1 minute longer. Season to taste with salt and pepper.
Spoon the rice onto individual plates and top with scallops. Drizzle the cooking liquids over and serve.
