Chinese Pear and Tangerine Salad

When Chinese pears are unavailable and tangerines are out of season, you can use common pears along with oranges for an equally refreshing accompaniment to the mu shu salmon. Chinese pears (also know as Asian pears and apple pears) are most often round, rather than tapered, and remain firm when ripe. In the grocery store you will often see them sold in a foam netting that protects against bruising.

Slice the Chinese pear across into thin rounds, showing off the star like center. Peel the tangerines and slice crosswise into rounds, or simply separate into segments. (Using a serrated knife makes slicing tangerines easier.) Arrange the Chinese pear and tangerine decoratively on the plate with the mu shu salmon.
