Halve the papaya and scoop out and discard the seeds. Carefully remove the peel with a vegetable peeler or sharp knife. Cut the papaya into thin 1/2-inch wedges and arrange wedges in a fan shape on 4 plates. Mound diced cucumber at the base of each fan. In a small bowl, combine lime juice, brown sugar and mint and stir until the sugar is dissolved. Drizzle the mixture over the salad just before serving.
