Seafood Chili Enchiladas

Ingredients:

• 6 large flour tortillas
• 1 recipe Seafood Chili
• 1 3/4 cups grated sharp cheddar cheese
• Guacamole
• 2 Tbsp. chopped jalapeño chiles
• Sour cream or plain yogurt

Cooking Instructions:

Heat the over to 425° F. Proceed as for burritos, but place the filled tortillas in a baking dish. Distribute the jalapeños evenly over the top and sprinkle with the additional cheese. Cover the dish with foil and bake until the cheese has melted, about 10 minutes.
