Seafood alternatives: Sea Bass, Flounder, Tuna
You don't have to spend a lot of time genteelly picking the leaves from the parsley sprigs in this recipe, since the herb will be puréed in the blender: Just grab the top of a clean bunch and twist off a handful of leaves and tender sprigs.
Herbed Mayonnaise:
For the herbed mayonnaise, combine the ingredients in a blender and purée until the parsley is very finely chopped. Season to taste with salt and pepper and set aside.
Heat a large, heavy skillet, preferably cast iron, over medium-high heat. Season the fish lightly with the Cajun seasoning and salt. When the pan is hot, add the oil and swirl to evening coat the bottom. Add the fish and cook until well-browned, 1 to 2 minutes. Turn the salmon and continue cooking until browned and cooked to taste, 1 to 2 minutes longer for medium, 3 to 4 minutes for medium-well to well done.
Set the salmon on the bottom buns and top with the desired garnish. Spread the top bun generously with herbed mayonnaise, top the salmon burgers and serve.
