Seafood alternatives: Simply Seafood® scallops
Nelson Crab® cooked shrimp, crabmeat, or surimi crab
Serve this dish with rice, over pasta, or as an appetizer.
1 package (9 oz.) frozen artichoke hearts, thawed.
Stir oil and garlic together in a 2-quart casserole dish. Cover and microwave on HIGH (100% power) until garlic is tender when pressed with the back of a spoon, 2 minutes. Add the shrimp, tomatoes, sage and half the cheese and stir until evenly mixed. Arrange shrimp in the center of the casserole in an even layer. Pour artichoke hearts around the outer edge; sprinkle with remaining cheese. Cover dish and cook on HIGH (100% power) until shrimp are pink on the outside, about 2 minutes, let stand, covered, 2 minutes. Stir shrimp with artichokes until artichokes are coated with seasonings.
